Vegan Egg Fried Rice

It's 2021 and there have been a lot of vegan substitutes for eggs. Have a go at this really delicious and creative recipe and add your favourite savoury toppings.

Ingredients

Fried Rice

  • 500 g Cooked Cold Rice a day old rice is best (less sticky)
  • 2 stalks Scallions chopped
  • 4-5 Long Green Beans chopped
  • 2 tbsp Pine Nuts
  • 4 tbsp Oil
  • 2 tsp Sesame Oil
  • Salt to taste

Vegan Egg

  • 100 g Chickpea Flour
  • 1/2 tsp Kala Namak It's a black himalayan salt that lends an eggy taste
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • Black Pepper
  • 1/2 cup Water
  • 2 tbsp Oil for cooking

Instructions

  • Mix the vegan egg ingredients together.
  • Add oil in a hot wok and cook your vegan egg. Stir and leave to cook.
  • Using your spatula, break the mixture apart until it resembles scrambled eggs. Remove from heat and transfer to a plate.
  • Break your rice apart with clean hands or using a spatula.
  • In the same wok, heat a few tbsp of oil and saute scallions, green beans and pine nuts. Add salt to taste. Stir-fry for a few minutes.
  • Add the rice and cook for 2-3 minutes.
  • Add in your vegan scrambled eggs and stir-fry for an additional 2 minutes.
  • Taste and adjust seasoning if necessary. Enjoy!
