Ingredients
Fried Rice
- 500 g Cooked Cold Rice a day old rice is best (less sticky)
- 2 stalks Scallions chopped
- 4-5 Long Green Beans chopped
- 2 tbsp Pine Nuts
- 4 tbsp Oil
- 2 tsp Sesame Oil
- Salt to taste
Vegan Egg
- 100 g Chickpea Flour
- 1/2 tsp Kala Namak It's a black himalayan salt that lends an eggy taste
- 1/4 tsp Turmeric Powder
- 1/4 tsp Garlic Powder
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
- Black Pepper
- 1/2 cup Water
- 2 tbsp Oil for cooking
Instructions
- Mix the vegan egg ingredients together.
- Add oil in a hot wok and cook your vegan egg. Stir and leave to cook.
- Using your spatula, break the mixture apart until it resembles scrambled eggs. Remove from heat and transfer to a plate.
- Break your rice apart with clean hands or using a spatula.
- In the same wok, heat a few tbsp of oil and saute scallions, green beans and pine nuts. Add salt to taste. Stir-fry for a few minutes.
- Add the rice and cook for 2-3 minutes.
- Add in your vegan scrambled eggs and stir-fry for an additional 2 minutes.
- Taste and adjust seasoning if necessary. Enjoy!
