Vegan Yaki Udon

Enjoy the flavours of Japan at home with this Vegan Yaki Udon. It's savoury and full of umami. Each bite will leave you craving for more.

Ingredients

Noodles

  • 450 g Udon Noodles
  • 3 cloves Garlic sliced
  • 1/2 Capsicum
  • 1/2 Carrot
  • 50 g Snow Peas
  • 5 Mushrooms
  • a few stalks Scallions chopped
  • 1 1/2 tbsp Oil for cooking

Sauce

  • 1/2 tbsp Sesame Oil
  • 2 tbsp Hoisin Sauce
  • 1 tbsp Soy Sauce
  • 1 tbsp Mirin
  • 1 tsp Sugar
  • 1/2 tsp Red Chili Flakes optional
  • 1/2 tsp Thick Soy Caramel

Instructions

  • Cook the udon according to the package instructions and set aside.
  • Cut all the vegetables into bite-sized pieces and set aside.
  • Mix all the sauce ingredients and set aside.
  • Heat 1 1/2 tbsp oil in a frying pan or wok. Add in garlic & onion sauté till fragrant.
  • Add the vegetables, stir fry for a couple minutes, add the udon noodle and toss all together.
  • Pour the sauce over the noodles and mix well and serve hot.
