Walnut Squash Chard with Golden Raisins

The creamy squash and the nutrient-rich veggies is a really lovely side dish that you can easily cook right in your sautée pan.

Cook Time: 30 minutes

Ingredients

  • 1 1/2 lbs Squash peeled and diced
  • 2 tbsp Olive Oil
  • 1 cup Walnuts roughly chopped
  • 1-2 lbs Red Swiss Chard
  • 1/2 tsp Ginger Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Turmeric
  • 1 tsp Dried Oregano
  • 1/2 tsp Cayenne Pepper
  • 1/2 tbsp Liquid Aminos
  • Salt & Pepper to taste
  • 3/4 cup Golden Raisins

Instructions

  • On a medium-low heat pan, add your olive oil and squash. ⁣
  • Cook for about 10 minutes⁣.
  • Add your walnuts and cook for another 10 minutes. ⁣
  • Stir consistently to avoid the walnuts burning and for them to release their natural oils. ⁣
  • When the squash become soft, add the red swiss chard. ⁣
  • Add spices and liquid aminos. Stir well. ⁣
  • Add the golden raisins. Cook for another few minutes. ⁣
  • Serve warm.
