Vegan Cherry Galette

Ingredients

  • 2 tbsp Cashew Milk for brushing the crust

Crust

  • 1 cup Gluten-free Flour
  • 1/4 cup White Rice Flour
  • 1 tbsp Coconut Sugar
  • 1 pinch Salt
  • 1/2 cup Coconut Oil solid state
  • 1/4 cup Iced Water

Fillings

  • 3 cups Cherries pitted
  • 1/4 cup Maple Syrup
  • 1 tbsp Arrowroot Powder

Instructions

  • Preheat oven to 375F. Line a baking pan with a Silpat or parchment paper.⠀
  • Combine all the ingredients for the crust together. Rolls into a ball & place in fridge for 20 min.⠀
  • Combine all the ingredients for the fillings together in a bowl. Set aside.
  • Roll dough out into 1/4th in thickness. Pour fillings into the center of the dough leaving 1 inch of the edge uncovered.⠀
  • Fold edges of dough together to form a circular shape.⠀
  • Brush cashew milk on crust.⠀
  • Bake for 25 minutes Remove from oven and let cool before slicing. Enjoy!

Notes

You can use whatever plant milk you have onhand for brushing the crust.
