Sweet & Spicy Tofu Noodle Bowl

Ingredients

Noodle Bowl

  • 1/2 package Tofu sliced in cubes and pressed to remove extra liquid
  • Cornstarch as needed
  • Salt to taste
  • Garlic Powder to taste
  • Ramen Noodles cooked
  • Veggies of choice chopped
  • Peanuts chopped
  • Sesame Seeds to sprinkle

Sauce

  • 1 tbsp Sesame Oil
  • 1 tbsp Chili Garlic Sauce
  • 2 tbsp Rice Wine Vinegar
  • 2 tbsp Light Soy Sauce
  • 2 tbsp Agave or Maple Syrup
  • 1/4 tsp Ground Ginger
  • 1/4 tsp Garlic Powder
  • 1 tsp Cornstarch mix with 1 1/2 tsp water

Instructions

  • Coat tofu cubes lightly with cornstarch, pan fry in a bit of oil until browned on all sides, about 10 minutes. Stir every few minutes.
  • Push tofu aside and add sauce, letting bubble to thicken. Spoon over tofu and use remaining sauce to coat noodles. 
  • Serve with veggies and noodles and top with peanuts and sesame seeds.
