French Toast Crumpets

Fancy breakfasts on weekends can be a thing. But worry not because this recipe is protein-packed and are made with healthy ingredients.

Ingredients

Batter

  • 1 tbsp Chickpea Flour
  • 20 g Protein Powder
  • 200 g Soy Milk
  • 1/4 tsp Cinnamon

Baked Apple

  • 1 Apple chopped
  • 1 tsp Cinnamon
  • 1 tsp Coconut Sugar
  • Water a splash
  • Salt a pinch

Optional Toppings

  • Fresh Fruits
  • Nut Butters
  • Plant-based Ice Cream

Instructions

Baked Apple

  • Start by mixing all your ingredients for the baked apple in an oven safe dish and bake for about 20 minutes on 200 degrees Celsius.
  • Then, add your ingredients for the batter into a dish and whisk to combine. If your batter is lumpy you can leave it to rest for a few minutes and it should become smoother.
  • Dip your crumpets into the batter one by one and cook in a non stick pan over medium - high heat until golden and crispy on both sides. 
  • Plate up and top with your cooked apple, ice cream and any other toppings you might wish.
