Chick’n Noodle Soup

Ingredients

  • 1 tbsp Plant-based Butter or oil
  • 2 cups Onion chopped
  • 2 cups Celery chopped
  • 2 cups Carrots chopped
  • 1 tbsp Garlic chopped
  • 9 oz Plant-based Protein chopped
  • 5 cubes Vegetable Buillon salt-free
  • 10 cups Water
  • 1 tbsp Dried Basil
  • 1 tsp Dried Oregano
  • 1 tsp Garlic Salt or plain sea salt
  • 3 cups Pasta uncooked
  • Pepper to taste

Instructions

  • Melt plant-based butter in a large pot.
  • Add chopped vegetables.
  • Cook vegetables on medium heat for 5 minutes.
  • Stir in diced plant-based protein, basil, oregano & garlic salt.
  • Cook covered for 5 minutes.
  • Add water and bring to a boil.
  • Dissolve bouillon cubes in water.
  • Add pasta and cook for 7-10 minutes, until al dente.
  • Serve hot and enjoy!
