Wild Rice Potato Soup

Ingredients

  • 4 cups Water
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 cup Wild Rice
  • 6 Baby Dutch Yellow Potatoes
  • 3 cups Vegetable Broth
  • 1/2 cup Peas
  • 1/2 cup Corn
  • 1/2 tsp Cumin
  • 1/2 tsp Cayenne
  • 1 tsp Turmeric

Instructions

  • In a pot on medium heat, sautee onion and garlic for 5 mins.⁣
  • Add potatoes, rice and water, cook for 20 mins until potatoes are soft.
  • Remove potatoes, and lightly mash them.
  • Put the potatoes back in the pot, add 3 cups of veggie broth and add spices. Cook for 5 minutes. ⁣
  • Add peas and corn, let it cook for about 10 minutes on med-high.
  • Serve hot. Enjoy!
