Ingredients
- 4 cups Water
- 1 Onion diced
- 2 cloves Garlic minced
- 1 cup Wild Rice
- 6 Baby Dutch Yellow Potatoes
- 3 cups Vegetable Broth
- 1/2 cup Peas
- 1/2 cup Corn
- 1/2 tsp Cumin
- 1/2 tsp Cayenne
- 1 tsp Turmeric
Instructions
- In a pot on medium heat, sautee onion and garlic for 5 mins.
- Add potatoes, rice and water, cook for 20 mins until potatoes are soft.
- Remove potatoes, and lightly mash them.
- Put the potatoes back in the pot, add 3 cups of veggie broth and add spices. Cook for 5 minutes.
- Add peas and corn, let it cook for about 10 minutes on med-high.
- Serve hot. Enjoy!
