Ingredients
Sauce
- 1/2 cup Raw Cashews soaked for a few hours
- 1/3 cup Filtered Water
- 1/2 lemon juiced
- 2-3 tbsp Nutritional Yeast
- Salt to taste
- 1 tbsp Yellow Mustard
- 1 tbsp Dijon Mustard
- 1 tbsp Fresh Dill
- 1 tbsp Maple Syrup
Salad
- 1/2 Red Onion diced
- 2 cups Spinach chopped
- 1 Capsicum diced
- Fresh Dill a pinch
- 1 box Pasta of choice
Instructions
- Cook your pasta according to the packaging or al dente. Drain and allow to cool.
- Add the sauce ingredients to a high speed blender and blend until creamy, adjust taste if needed.
- Add the pasta to a large bowl and mix in the onion, spinach, capsicum (bell pepper) and dill. Stir through the sauce until combined and enjoy!
