Pasta Salad

Incredibly creamy and delectable, this pasta salad will surely win everyone’s hearts. Cashews have been used to create the creamy sauce. Perfectly nutritious and loaded with healthy fats!

Ingredients

Sauce

  • 1/2 cup Raw Cashews soaked for a few hours
  • 1/3 cup Filtered Water
  • 1/2 lemon juiced
  • 2-3 tbsp Nutritional Yeast
  • Salt to taste
  • 1 tbsp Yellow Mustard
  • 1 tbsp Dijon Mustard
  • 1 tbsp Fresh Dill
  • 1 tbsp Maple Syrup

Salad

  • 1/2 Red Onion diced
  • 2 cups Spinach chopped
  • 1 Capsicum diced
  • Fresh Dill a pinch
  • 1 box Pasta of choice

Instructions

  • Cook your pasta according to the packaging or al dente. Drain and allow to cool.
  • Add the sauce ingredients to a high speed blender and blend until creamy, adjust taste if needed.
  • Add the pasta to a large bowl and mix in the onion, spinach, capsicum (bell pepper) and dill. Stir through the sauce until combined and enjoy!
