Ingredients
- 120 g Couscous
- 2 tbsp Olive Oil
- 120 g Almonds
- 100 g Dates
- 1 bunch Fresh Mint
- 3 Spring Onions
- 200 g Cherry Tomatoes
- 1/2 Cucumber
- 1 Lemon
- Salt & Pepper to taste
Instructions
- Add couscous, double the amount of water, 1 Tbsp olive oil and a little salt to a saucepan. Bring to boil and let simmer for 3 minutes. Take off the heat and set aside.
- Heat up a pan and gently toast the almonds. Chop almonds roughly after they are cooled.
- Slice dates and spring onions, juice lemon, chop the mint, finely cube cucumber and quarter the tomatoes.
- Combine all ingredients in a big bowl, add the lemon juice and 1 Tbsp of olive oil. Mix well and add salt and pepper to taste.
