Couscous with Mint

Ingredients

  • 120 g Couscous
  • 2 tbsp Olive Oil
  • 120 g Almonds
  • 100 g Dates
  • 1 bunch Fresh Mint
  • 3 Spring Onions
  • 200 g Cherry Tomatoes
  • 1/2 Cucumber
  • 1 Lemon
  • Salt & Pepper to taste

Instructions

  • Add couscous, double the amount of water, 1 Tbsp olive oil and a little salt to a saucepan. Bring to boil and let simmer for 3 minutes. Take off the heat and set aside.
  • Heat up a pan and gently toast the almonds. Chop almonds roughly after they are cooled. 
  • Slice dates and spring onions, juice lemon, chop the mint, finely cube cucumber and quarter the tomatoes. 
  • Combine all ingredients in a big bowl, add the lemon juice and 1 Tbsp of olive oil. Mix well and add salt and pepper to taste.
