Ingredients
- 1 Onion
- 1 Red Pepper
- 1 can Chickpeas
- 1 small Sweet Potato cut into small chunks
- 1 tbsp Smoked Paprika
- 1/2 tsp Rosemary
- 1/2 tsp Garlic Powder
- 1/2 tsp Liquid Smoke optional
- 1 can Tomatoes
- 3 handfuls Spinach
- 1 cup Veggie Stock
- Cherry Tomatoes to serve
Instructions
- Fry off red pepper and onion and sweet potato in a pan for 5 minutes until a little browned.
- Add in chickpeas, tomatoes stock and spices. Simmer for 20 minutes over low heat until thick, add in spinach and fold in before serving. Add some cherry tomatoes on top and enjoy with your favourite grains and broccolini!
