Ingredients
Pancakes
- 1 1/4 cups Gluten-free All Purpose Flour
- 120 g Apple Puree or one sliced banana
- 1/2 tsp Cinnamon
- 2 tbsp Granulated Stevia or any natural sweetener of choice
- 1 1/2 tsp Baking powder
- 1 tbsp Coconut Oil
- 1 1/4 cups Unsweetened Almond Milk
- Salt a pinch
- 1 tsp Pure Vanilla Extract
- 1/4 tsp Xanthan Gum optional
Caramelized Apples
- 2 Apples peeled and diced
- 1/2 tsp Cinnamon
- 1/4 tsp Ground Ginger
- 1/8 tsp Nutmeg
- 1/8 tsp Allspice
- 1 tbsp Coconut Sugar
- 1/4 cup boiling water
- 1 tsp Coconut Oil optional
Instructions
Pancakes
- Mix dry ingredients in a bowl.
- Mix wet ingredients in another bowl.
- Make a well in the center of the dry ingredients and pour in your wet mixture.
- Stir until just combines.
- Ladle batter into pan and cook over low heat until bubbles form on top.
- Flip and cook for 1-2 minutes.
Caramelized Apples
- Add all ingredients to a frypan and cook until apples are softened.
- Add a splash more water if needed.
- Top with ice cream!
