Apple Pie Pancakes with Caramelised Apples

Ingredients

Pancakes

  • 1 1/4 cups Gluten-free All Purpose Flour
  • 120 g Apple Puree or one sliced banana
  • 1/2 tsp Cinnamon
  • 2 tbsp Granulated Stevia or any natural sweetener of choice
  • 1 1/2 tsp Baking powder
  • 1 tbsp Coconut Oil
  • 1 1/4 cups Unsweetened Almond Milk
  • Salt a pinch
  • 1 tsp Pure Vanilla Extract
  • 1/4 tsp Xanthan Gum optional

Caramelized Apples

  • 2 Apples peeled and diced
  • 1/2 tsp Cinnamon
  • 1/4 tsp Ground Ginger
  • 1/8 tsp Nutmeg
  • 1/8 tsp Allspice
  • 1 tbsp Coconut Sugar
  • 1/4 cup boiling water
  • 1 tsp Coconut Oil optional

Instructions

Pancakes

  • Mix dry ingredients in a bowl.
  • Mix wet ingredients in another bowl.
  • Make a well in the center of the dry ingredients and pour in your wet mixture.
  • Stir until just combines.
  • Ladle batter into pan and cook over low heat until bubbles form on top.
  • Flip and cook for 1-2 minutes.

Caramelized Apples

  • Add all ingredients to a frypan and cook until apples are softened.
  • Add a splash more water if needed.
  • Top with ice cream!
