Veggie Kebabs with Vegan Satay Peanut Sauce

Ingredients

Vegan Satay Sauce

  • 1 small Onion
  • 1 tsp Garlic Powder
  • 1 tsp Ginger Powder
  • 2 1/2 tbsp Brown Sugar
  • 1 tbsp Soy Sauce
  • 4 tbsp Oil
  • 6 Pineapple Cubed
  • 1 tbsp Sambal Paste
  • 1/2 cup Roasted Peanuts reserve 2 tbsp for sprinkling
  • Salt to taste
  • 1/2 cup Water add more or less until desired consistency is achieved

Veggie Kebab

  • 1 Cucumber
  • 1 small Pineapple
  • 1 Red Onion
  • 1 packet Mushrooms
  • 3 small Capsicums you can use a mix of red, yellow and green

Instructions

Vegan Satay Sauce

  • Blend all the ingredients till it turn smooth. Next pour the sauce into the sauce pan and cook in a medium low heat. Once it boil removed from the heat and serve with the veggie kebabs.

Veggie Kebabs

  • Preheat the grill pan to medium low heat.
  • Chop all the veggies into a large chunks. Work the vegetables onto the skewers on a random pattern (soak those wood skewers for at least 15 min before use).
  • Brush some oil onto the veggies before grilling, remember rotating them every 2-3 minutes in order to get the grilled mark.
  • Serve warm with vegan satay sauce.
