Veggie Burrito

Ingredients

  • Tortilla Wraps

Mexican-style Rice

  • 1 cup Brown RIce rinsed
  • 1.5 cups Water
  • 1 can Tomatoes with Green Chilis or 1 can of tomatoes plus a few fresh green chilis
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • Salt & Pepper to taste

Fillings

  • Cooked Black Beans
  • Plant-based Chorizo optional
  • Lettuce sliced
  • Sweet Mini Peppers sliced
  • Tomatoes sliced
  • Onions sliced
  • Fresh Cilantro chopped
  • Pineapple Salsa optional
  • Cashew ‘Cheese’ optional
  • Guacamole

Instructions

Mexican-style Rice

  • Bring everything to a boil in a small pot, cover with a lid and let simmer on very low heat for 15-20 minutes.
  • Turn off the heat, let sit for another 5 minutes, fluff up with a fork and set aside to cool.

Assembly

  • Place your mexican-style rice and your fillings on top of your tortilla wraps. Add as much or as little as you want. But keep in mind that It’s still important that you can wrap the tortilla around the fillings. Enjoy with sriracha or hot sauce!
