Vegan Stuffed Shell Pasta

Ingredients

  • 1 Onion chopped
  • 2 Zucchini chopped
  • 1 Eggplant chopped
  • 3 tbsp Tomato Paste
  • 3 cloves Garlic crushed
  • 20-25 large Shell Pasta cooked and drained
  • 2 tbsp Parsley chopped
  • 3 tbsp Lime Juice
  • Salt & Pepper to taste
  • Chili Flakes as needed
  • Olive Oil as needed
  • Oregano to taste
  • Your favorite pasta sauce homemade or bottled, as needed
  • Vegan Cheese optional

Instructions

  • In a large saucepan on a medium heat add oil, onion and garlic and stir for 5-6 minutes, add zucchini and eggplant and stir. Add tomato paste, salt, pepper, chili flakes, oregano and stir occasionally for 8-9 minutes. Add lime juice, parsley and stir occasionally for 6-7 minutes. 
  • Fill Pasta Shells with the mixture. Place them in a large oven safe dish with your favorite sauce.
  • You can add vegan cheese on the top. Put them in oven for 15-20 minutes. 
  • Serve warm.
