Ingredients
- 1 Onion chopped
- 2 Zucchini chopped
- 1 Eggplant chopped
- 3 tbsp Tomato Paste
- 3 cloves Garlic crushed
- 20-25 large Shell Pasta cooked and drained
- 2 tbsp Parsley chopped
- 3 tbsp Lime Juice
- Salt & Pepper to taste
- Chili Flakes as needed
- Olive Oil as needed
- Oregano to taste
- Your favorite pasta sauce homemade or bottled, as needed
- Vegan Cheese optional
Instructions
- In a large saucepan on a medium heat add oil, onion and garlic and stir for 5-6 minutes, add zucchini and eggplant and stir. Add tomato paste, salt, pepper, chili flakes, oregano and stir occasionally for 8-9 minutes. Add lime juice, parsley and stir occasionally for 6-7 minutes.
- Fill Pasta Shells with the mixture. Place them in a large oven safe dish with your favorite sauce.
- You can add vegan cheese on the top. Put them in oven for 15-20 minutes.
- Serve warm.
