Ingredients
- 1 small Onion chopped
- 2 cloves Garlic minced
- 1 tsp Ginger minced
- 1-2 tsp Curry Powder
- 1 tsp Cumin
- 1/2 tsp Coriander
- 1/2 tsp Salt
- Pepper to taste
- 1 can Chopped Tomatoes
- 1 can Chickpeas
- 1 can Coconut Milk
- Spinach to taste
Instructions
- Sauté onion, garlic and ginger in a large pan for 3-5 min. Stir in spices, tomatoes and tomato paste, cook another 5 min.
- Add drained chickpeas, coconut milk and spinach and cook without lid for 10-15 min. Serve over brown rice.
