Vegan Chickpea Curry

Ingredients

  • 1 small Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Ginger minced
  • 1-2 tsp Curry Powder
  • 1 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Salt
  • Pepper to taste
  • 1 can Chopped Tomatoes
  • 1 can Chickpeas
  • 1 can Coconut Milk
  • Spinach to taste

Instructions

  • Sauté onion, garlic and ginger in a large pan for 3-5 min. Stir in spices, tomatoes and tomato paste, cook another 5 min. 
  • Add drained chickpeas, coconut milk and spinach and cook without lid for 10-15 min. Serve over brown rice.
