Sweet Potato Fries with Creamy Guacamole

Sweet Potatoes are a great substitute for your regular potatoes. They are a bit sweet but they are much more nutritious. It’s a slow carb and has a low Glycemic Index which is great for diabetics or those who are watching their weight.

Cook Time: 20 minutes
Total Time: 35 minutes

Ingredients

  • 2 medium Sweet Potatoes
  • Olive Oil as needed
  • 1 tbsp Cornstarch
  • Salt to taste
  • Pepper to taste
  • Chili Flakes to taste
  • Garlic Powder to taste

Guacamole

  • 3 small Avocados
  • 1/2 Chili chopped
  • 1/4 Red Onion chopped
  • 1/2 Lime juiced
  • Salt to taste
  • 1 clove Garlic chopped
  • 4 Cherry Tomatoes
  • Cilantro to taste

Instructions

  • Preheat oven to 225c (435F).
  • Wash 2 medium sweet potatoes, dry and cut into fries and mix in a bowl with some olive oil, 1 tbsp corn starch, salt, smoked pepper, chili flakes and garlic powder. Pour on to lined baking sheet and cook for 20 minutes.
  • For the guacamole, add everything into the blender and blend for a few seconds just until everything is mixed.
