Ingredients
- 1 Onion
- 2 cloves Garlic
- 2-3 cm Ginger grated
- 1 tsp Coconut Oil
- 1 small Sweet Potato
- 1 Zucchini
- 2 Red Bell Peppers
- 1 cup Chickpeas
- 1 cup Cashews
- 1 can Diced Tomatoes
- 1 1/2 cups Coconut Milk
- 1/2 cup Parsley
- 2 tbsp Lemon Juice
- 3-4 tsp Curry Powder
- 2 tsp Cumin
- Salt & Pepper to taste
Instructions
- Peel the onion, the garlic and sweet potato and cut them into cubes.
- Heat a pot over medium heat and add coconut oil.
- Add the onion and garlic to the pot and sauté it until translucent and soft.
- Add ginger, sweet potato, the zucchini and the bell peppers to the pot and cook for 3-5 minutes.
- Add the remaining ingredients and cook everything for 15-20 minutes.
