Sweet Potato Curry with Black Rice

Ingredients

  • 1 Onion
  • 2 cloves Garlic
  • 2-3 cm Ginger grated
  • 1 tsp Coconut Oil
  • 1 small Sweet Potato
  • 1 Zucchini
  • 2 Red Bell Peppers
  • 1 cup Chickpeas
  • 1 cup Cashews
  • 1 can Diced Tomatoes
  • 1 1/2 cups Coconut Milk
  • 1/2 cup Parsley
  • 2 tbsp Lemon Juice
  • 3-4 tsp Curry Powder
  • 2 tsp Cumin
  • Salt & Pepper to taste

Instructions

  • Peel the onion, the garlic and sweet potato and cut them into cubes.
  • Heat a pot over medium heat and add coconut oil.
  • Add the onion and garlic to the pot and sauté it until translucent and soft.
  • Add ginger, sweet potato, the zucchini and the bell peppers to the pot and cook for 3-5 minutes.
  • Add the remaining ingredients and cook everything for 15-20 minutes.
