- 2 Sweet Potatoes
- 2 tbsp Olive Oil
- 1 cup Cashews soaked for atleast 4 hours in cold water or 1 hour in hot water.
- 1/2 Avocado
- 1 bunch Basil
- 4 tbsp Olive Oil
- 3 tbsp Nutritional Yeast
- 2 tbsp Lemon Juice
- Salt & Pepper
- Spiralize the sweet potatoes. Heat the oil in a skillet and sautee the sweet potato noodle until tender.
- Blend all ingredients for the pesto and season to desired taste. Add more nutritional yeast for more cheesiness, lemon juice for more peps, salt for more saltiness.
- Pour on your noodles and enjoy!
