Pesto & Sweet Potato Noodles

Ingredients

Noodles

  • 2 Sweet Potatoes
  • 2 tbsp Olive Oil

Pesto

  • 1 cup Cashews soaked for atleast 4 hours in cold water or 1 hour in hot water.
  • 1/2 Avocado
  • 1 bunch Basil
  • 4 tbsp Olive Oil
  • 3 tbsp Nutritional Yeast
  • 2 tbsp Lemon Juice
  • Salt & Pepper

Instructions

  • Spiralize the sweet potatoes. Heat the oil in a skillet and sautee the sweet potato noodle until tender.
  • Blend all ingredients for the pesto and season to desired taste. Add more nutritional yeast for more cheesiness, lemon juice for more peps, salt for more saltiness. 
  • Pour on your noodles and enjoy!
