Mushroom, Snow Pea & Noodle Stir-fry

Ingredients

  • 4 oz Brown Rice Noodles

Sauce

  • 1 tsp Sesame Oil
  • 2 tsp Agave
  • 1/4 cup Soy Sauce low sodium
  • 1 tbsp Rice Vinegar
  • 1 tbsp Hoisin Sauce
  • 1 tbsp Ginger grated, or some ginger powder
  • 3 cloves Garlic minced

Veggie Stir-fry

  • 1 tsp Oil
  • 1 Bell Pepper thinly sliced
  • 8 oz Mushrooms
  • 1 1/2 cup Snow Peas

Garnish (optional)

  • Sesame Seeds
  • Red Chili Flakes
  • Lime Juice

Instructions

  • Boil water for noodles.
  • Mix sauce ingredients and set aside.
  • Heat oil in large pan over medium heat and add veggies, toss, cook total 3 to 5 minutes until crisp-tender.
  • Drop noodles in water when it boils. They cook quickly! Drain and rinse them and add to veggies along with sauce.
  • Combine, stir and top with lime squeeze, sesame seeds and chili flakes.
