Crispy Pasta with Coconut, Cashews and Sun-dried Tomato Dip

Ingredients

  • Pasta
  • Olive Oil as needed
  • Your choice of spices to taste
  • Salt & Pepper to taste
  • Arugula as needed
  • Micro greens as needed
  • 1/2 Avocado
  • Hemp Seeds to taste

Sauce

  • 1/4 cup Sun-dried Tomatoes
  • 1 cup Full Fat Coconut Milk
  • 1/3 cup Cashews
  • 2 cloves Roasted Garlic
  • Salt & Pepper to taste

Instructions

  • Cook pasta until al dente. Toss with oil and spices and bake for about 15-20 minutes, spread out on a parchment paper at 400 degrees Fahrenheit.
  • For the sauce, blend all the ingredient together until smooth.
  • To assemble, serve the pasta on a bed of micro greens and arugula and top with the sauce, hemp seeds and avocado.
