Ingredients
- Pasta
- Olive Oil as needed
- Your choice of spices to taste
- Salt & Pepper to taste
- Arugula as needed
- Micro greens as needed
- 1/2 Avocado
- Hemp Seeds to taste
Sauce
- 1/4 cup Sun-dried Tomatoes
- 1 cup Full Fat Coconut Milk
- 1/3 cup Cashews
- 2 cloves Roasted Garlic
- Salt & Pepper to taste
Instructions
- Cook pasta until al dente. Toss with oil and spices and bake for about 15-20 minutes, spread out on a parchment paper at 400 degrees Fahrenheit.
- For the sauce, blend all the ingredient together until smooth.
- To assemble, serve the pasta on a bed of micro greens and arugula and top with the sauce, hemp seeds and avocado.
