Ingredients
- 1 box Pasta
- 1/4 Red Onion
- 1-2 cloves Garlic minced
- 1 Carrot
- 1 head Broccoli
- 1/4 Red Bell Pepper
- Salt & Pepper to taste
- 1/2 tsp Turmeric
- 1 tbsp Mirin optional but recommended
- 3 tbsp Soy Sauce
- 1 tbsp maple Syrup
- 1/4 cup Pasta Water or vegetable stock
- 1/2 tbsp Sesame Oil
- 1 tbsp Extra Virgin Olive Oil
- 1 tsp Toasted Sesame Seeds
Instructions
- Cook pasta according to instructions on box, less 1 minute cooking time. In the meantime, julienne all veggies (fancy word for slice lengthwise into skinny pieces, kinda like matchsticks) in a large skillet or wok, add olive oil over medium high heat.
- Add all veggies together with garlic. Add salt, pepper, and turmeric and cook until veggies soften. Deglaze pan with mirin (i.e., add the mirin and scrape up any brown bits from the bottom of pan).
- Next add soy sauce and maple syrup and stir so all veggies are coated. By this time, your pasta should be done–add cooked pasta directly to pan of veggies. Pasta will likely be a little dry, so add pasta water or broth.
- Simmer for a few minutes until the liquid thickens. This is why it’s important not to cook your pasta completely, so that it doesn’t get overcooked while cooking in the sauce.
- When ready to serve, top off with a little sesame oil and sesame seeds.
